Cut the strawberries into slices. Mix 1/3 cup of liqueur with the same amount of orange juice and dip each cookie into the resulting mixture for literally a second. To prepare delicious tiramisu, you need to use only chilled cream and whip it only in a chilled container. Therefore, we put the middle bowl in the refrigerator in advance and leave it there somewhere for 1 hour. During this period of time, the container will cool down enough and we will be able to prepare the dairy ingredient. So, pour the cream into a bowl and add powdered sugar a little at a time. Using a mixer or a hand whisk, beat all the ingredients until we run out of powdered sugar and the mass becomes dense. Attention: It is necessary to beat the components to soft peaks, since if the mass becomes the consistency of soft butter, it will be more difficult to saturate the biscuit with it. In order to soak the biscuit so that it becomes juicier and tastier, we first need to dissolve the black coffee. To do this, boil 150 milliliters of purified water in an electric kettle. Using a teaspoon, pour instant coffee into a cup or bowl and, when the water boils, pour it into the container with the coffee ingredient. Mix everything well with available equipment until the coffee is completely dissolved. Since the coffee drink needs to cool, set it aside for 25-35 minutes.

Step 5: prepare the sponge cake.

To make tiramisu without eggs, both the crust and the cookies are suitable. The main thing is that these two ingredients are prepared in advance from biscuit dough. You can also purchase a ready-made product at the supermarket, which will save you time spent on baking. So, if you use cookies in the recipe, just put them on a plate and set them aside for a while. Attention: try to choose long-shaped cookies in the form of sticks, this will make it much more convenient to form the tiramisu. If you decide to add sponge cake to tiramisu, then place it on a cutting board and use a knife to cut the ingredient into small strips of thickness no more than 1.5-2 centimeters. Afterwards, pour cocoa powder into a small strainer and sprinkle the second cream layer with this ingredient. We repeat everything from the beginning again: lay out the remaining biscuit strips in a third layer and again grease everything with the mixture, finally sprinkling everything with cocoa powder. Attention: Sprinkle the last layer with plenty of cocoa powder. So that our cake is soaked with cream cheese cream, we put it in the refrigerator for 1 hour.

After the allotted time for soaking the layers, tiramisu without eggs can be served and pamper your children and loved one with such a delicious and very tender cake. And to do this, using a knife, cut the dish into portioned pieces and place them on plates using a wooden spatula. You can enjoy the fragrant, juicy and airy cake with hot tea or coffee. And since you’ve decided to give up raw eggs, cream will be an alternative. By the way, not a bad replacement at all!

So, after adjustments, the recipe looks like this:

  • Mascarpone cheese – 0.5 kg;
  • cream – 200 ml (fat content not less than 33%);
  • “Lady fingers” cookies – 18 – 20 pieces;
  • powdered sugar – 100 g;
  • freshly brewed natural coffee – 200 ml (chilled);
  • 2 tbsp. l. cognac, Amaretto, brandy (it all depends on preferences);
  • a bar of chocolate (preferably dark);
  • cocoa powder (for decoration).

You need to take care of the shape for the future delicacy in advance. The most convenient is the square one. This dessert looks very impressive in a glass container.

Making tiramisu without eggs:

  1. First, you need to keep the whipping cream container in the refrigerator for some time. As soon as it has cooled thoroughly, start the process (of course, the cream must also be well cooled). Add powdered sugar into the creamy mixture gradually.
  2. When the cream has thickened sufficiently, put the mixer aside. Further manipulations should be carried out exclusively with a spatula: little by little, very carefully, mix soft cheese into the cream. There is no need to rush: the more air bubbles remain, the more tender the cream will be.
  3. Pour alcohol into the cooled coffee and start dipping the “Lady fingers” in it one by one. This is where you need to act quickly, without letting the cookies get soggy. You need to cover the bottom of the mold with those chopsticks that have already taken a coffee bath.
  4. Cover the cookies with half the cream and sprinkle with finely grated chocolate. In the same way, form the second layer of dessert. Now you need to put it in the refrigerator for a full 6 hours (minimum!) and be patient. It will certainly be rewarded!

After the specified time, all that remains is to take out the dessert and, without skimping, sprinkle it with cocoa. Tiramisu without eggs is completely ready to delight with its taste everyone who is lucky enough to be invited to the table.

Berry variation

Experiment - so experiment! Why not make a berry tiramisu: with sweet cherries, sweet cherries or strawberries? Of course, frozen berries will not work here.

To implement this bold version you will need:

  • 250 g of berries (pits should be removed from cherries);
  • 0.5 kg mascarpone;
  • 1 tbsp. l. liqueur (cherry);
  • pulp of 1 vanilla pod;
  • 2 tbsp. l. powdered sugar;
  • “Lady fingers” cookies – 16 pcs. (approximately);
  • Amaretto and strong coffee - 3 tbsp each. l.;
  • cocoa powder – 2 tbsp. l.;
  • dark chocolate bar.

Tiramisu without eggs, but with berries, is prepared as follows:

  1. Beat the mascarpone well with the powdered sugar, liqueur and vanilla. “Bathe” the cookies in a mixture of Amaretto and coffee and form it into the bottom layer of the dessert at the bottom of the mold.
  2. Place half the cream on the cookies, sprinkle with grated chocolate, then place the berries and finish the composition with the remaining cream.
  3. All that remains is to cover the dessert with film (or a lid) and send it to steep in the refrigerator.

And if you need to make cheese, then take 10 minutes longer. If you also bake cookies, then you will have to tinker longer. But suddenly my mother brought a pack of savoiardi as a gift! Now it’s definitely time to make tiramisu, I decided.

And I found a recipe for homemade tiramisu without eggs, since the original recipe uses raw yolks. But it’s rare to find domestic eggs of guaranteed quality and exceptional freshness. Therefore, I suggest you make homemade tiramisu with cream and mascarpone. How to make mascarpone from cottage cheese and cream is described in the previous recipe. You need to beat 200 g of cottage cheese, pureed through a sieve, with 200 g of chilled 33% cream for 5-10 minutes. This is the simplest and quick way prepare mascarpone cream for tiramisu.

I made tiramisu at big company in a glass form 25x35 cm. The dessert can also be prepared in portions, in transparent bowls or glasses.


Ingredients:

  • 400 g savoiardi cookies;
  • 500 g mascarpone cheese;
  • 200 ml cream 33%;
  • 100 g powdered sugar;
  • 200 ml of freshly brewed and chilled natural coffee;
  • 1 tablespoon cognac;
  • 50 g dark chocolate or 1-2 tablespoons dark cocoa powder.

How to bake:

First, let's brew coffee, definitely natural, ideally freshly ground. Let it brew, then strain it through a strainer and leave to cool.

After the cream has been cooled for at least a couple of hours in the refrigerator, pour it into a chilled bowl and beat with a mixer for 4-5 minutes, adding powdered sugar one spoon at a time. The cream will thicken and the mixer will begin to leave distinct marks on the mixture (just be careful not to overbeat it, otherwise it may turn into butter).


Now carefully, 1-2 spoons at a time, add mascarpone cheese into the whipped cream.


The result is a very tender, tasty creamy mass. Tiramisu cream without eggs is ready.


Add a spoonful of cognac to the coffee. Take the cookies one at a time and quickly dip both sides into the coffee. We dip it in and immediately take it out, because biscuit cookies get soggy very quickly.


Place the cookies close to each other in rows in the pan.


After laying out one layer of cookies, spread half of the cream on top. It is convenient to spoon out portions of cream and then spread with a spatula.

I read an opinion that cocoa is not the best option, since you can smell it while eating :) But I decided to test both variations of the recipe, so I sprinkled half of it with dark cocoa through a strainer, and grated the other half with chocolate on a fine grater. In the end it tasted almost the same. And the cocoa powder was moistened by its proximity to the cream and did not scatter at all.

Place the finished tiramisu in the refrigerator for at least 4 hours. The dessert should sit, the buttercream should cool, and the cookies should soak. They become moist, tender and soft, and the tiramisu melts in your mouth. To prevent the dessert from picking up odors from the refrigerator, cover the pan with a sheet of foil.

Traditionally, tiramisu is eaten with spoons straight from the mold. However, in order not to have the whole group gobble up the dessert with spoons from one dish, you can carefully cut it with a knife into portioned squares-cakes and place them on plates using a spatula. Be careful - tiramisu is very delicate.
